Cottage cheese – Spinach and Mix dry veggies!

Mix dry veggies :

This one is super tasty and will go with anything – as a side dish, as a full meal, curry you name it. I am always hungry and I am always in a hurry so this one is kinda regular for me. Here’s what you need :

  • Bunch of your favourite greens – I used broccoli, beans, spring onions – Chopped
  • Your favorite yellows and reds – I used 2 cups of sliced pumpkins, finally chopped red and yellow bell pepper.
  • 1/2 TBS ginger garlic paste.
  • 1 TBS turmeric powder.
  • 1/2 TBS paprika.
  • Pinch of black pepper.
  • Salt as required.
  • Canola oil 2 TBS.

Here’s what you do :

Heat up a pan, pour oil. Add all of the finally chopped vegetables to the pan, cover and wait until soft (approx 2 minutes). Add ginger garlic paste, mix well, add other spices at this point (turmeric, paprka, salt and black pepper) and cover for another 2 minutes on medium heat. Check and mix all the spices using a spatula. Cook for another 2 minutes and BAM!! you have got yourself a tasty and healthy mix dry veggies!

If  you prefer a little more crunchier option, you can roast all the veggies using similar dressing at 350 degrees for 10 minutes. The final product looks something like this –

Serve hot with herb rice or bread of your choice. This can even stay in fridge for upto 3 days so a feasible option if you meal prep like me 🙂

Cottage cheese – spinach curry

Recipe no.2 is one of my favorites especially for a quick dinner option. I am usually tired at the end of the day so I prefer something that cooks fast and satisfy my taste buds equally and this does that perfectly. Here’s what you need –

  • Home made/ fresh cottage cheese – tons of protein.
  • 2 cups spinach finally chopped.
  • spring onion finally chopped.
  • 1 cup almond milk.
  • 1 TBS canola oil.
  • Spices – turmeric, red chilly powder, asfoetida (optional)
  • Salt as per taste

Heat a pan, pour oil, add finally chopped spring onions and wait until light brown. Then add cottage cheese (cut in squares), cover and wait for 2 minutes. Afterwards, add spinach and all the spices, let it simmer for 2-3 minutes in medium heat. When the spinach is cooked and starts to reduce in quantity, add almond milk and wait until dry. I swear the final product is PERFECTION, thank me later. Here’s how mine looked while in the process –

  1. Hey Donna! That’s the beauty of these dishes, you really don’t have to have all the ingredients and it will still be yummy. You can totally skip the spices and instead add a flavour according to your taste. In the cottage cheese spinach recipe, you can make it creamier by adding fresh cream or milk skipping the spices altogether! 🙂
